Taste of Westchester: Peter Pratt’s Inn
673 Croton Heights Road, Yorktown Heights, 914-962-4090, www.peterprattsinn.com
Special Menu with Guest Master Chef! Join Owner Enver Pelinku along with Chef Jon Pratt (former owner) for this one-of-a-kind class! Jon sold his family business in 2020 to a new generation of restaurateurs, Enver and Naya Pelinku. Jon is known for his fascinating tales of owning the restaurant and a joke or two along the way. Watch this fabulous food educator as he returns for a special demonstration prepared in live time. We are lucky that they will host another cooking demo at the Inn this time celebrating autumn cuisine. The colonial homestead was built in 1780 and has been a local inn dating back to 1926 with a prior robust revolutionary history, including a visit from George Washington’s horse housed in the stables below. The inn’s new hosts continue to make it a special place to dine and drink in their renovated dining rooms and outdoor space. This entertaining master chef has been pulled from retirement by popular demand. Learn to perfectly sear a “dry” scallop, braise endive, and create a silky parsnip puree for the perfect bite. We will watch Jon make giant raviolo stuffed with braised and shredded short ribs and au jus. It would not be a Jon Pratt lesson without his favorite duck. Tonight a “how to” on making the crispiest latkes (potato pancakes) using duck fat to pan fry and topping them with duck leg confit and crème fraîche topped with duck skin cracklings. Enjoy a sweet lesson on sticky date cake (pudding) with butterscotch sauce. Jon will delight us with tales of the Inn’s history and his culinary past in this special evening. This magical night is sure to be a popular offering, so grab a friend and reserve your spot early!
