Classic Italian Pasta and Mozzarella Demo! Pasta just like Nonna used to make! Join Owner Nando Paterra and Chef Arturo Marrou for a “how to” on making fresh mozzarella, which is crafted daily at Mima Vinoteca. Enjoy tasting it just made while still warm and milky. Chef talks about speck (smoked prosciutto), a cured pork product from Italy that is typically salted and air-cured then lightly smoked as he pan sautés it to adorn our pasta dish. Watch how easy it is to hand make gnocchi di zucca – butternut squash pasta. Chef combines these airy pillows of dough with bitter radicchio and the crispy speck in an easy to duplicate butter sage sauce. Tonight’s dolce experience is the preparation of an Italian classic that our Mima used to make – warm doughnuts called Bombolini. Learn to make whipped ricotta to infuse the zeppole and a sweet caramel dipping sauce. Optional additional $25 pairs a wine selection with each course. This restaurant is a tribute to our Mimas!
