Our hosts, Silvano and Sue Vales and friends will keep us in the “spirit” of the season and may share some past mysterious occurrences for a scary Halloween tale! Our evening begins with a braised pork belly with chipotle aioli amuse bouche (French for my mouth is always amused), and a “how to” on Sue’s fall inspired roasted pumpkin, apple and butternut squash soup, a perfect “treat” for your holiday meals. Chef will teach the “trick” to breaking down a duck to prepare two ways, both classic confit and pan seared, in a traditional l’orange sauce laced with Grand Marnier. Classified as a vegetable they are actually a fruit and are the star of the show as AJ teaches us how to incorporate them into several dishes. Make your own mozzarella from fresh curd to incorporate while still warm into a beautiful Caprese salad. Learn to slow roast tomatoes in EVOO to top a classic garlic rubbed bruschetta. Watch our chef as he easily makes tomato bacon jam to adorn their famous mozzarella burger.
